Growing up, I loved cartoons like every other kid, but at around the age of nine I discovered Julia Child, Jacques Pepin and Jeff Smith. Oh how I loved my Saturday cooking shows on PBS. I could sit there for hours and watch as magic happened right in front of my eyes. They were all so different from each other and from me, yet we were all passionate about the same thing. Ingredients, spices, innovative ideas which turned into beautiful fragrant meals. I remember one afternoon, I must have been 12, when Jacques Pepin shared a his recipe for Caesar salad, I still make it from scratch till this day and everyone loves it.

1 Large bowl
1 Romaine lettuce
2 cloves garlic
1 egg yolk
about 1/2 cup olive oil
juice of 1 lemon
1 tbsp good Dijon mustard
2-3 anchovy filets or anchovy paste
1/3 cup kosher grated Parmesan
croutons
salt & pepper
Start by either crushing your garlic, or if you have a wooden bowl, peel the garlic and grate it on the sides of the bowl, then add you anchovies, mustard, lemon, s+p egg yolk and lemon juice and whisk. The slowly add your oil and whisk till you have a creamy sauce. To the sauce add you washed and cut up lettuce, Parmesan, croutons and toss.
That's it, one great salad that is perfect with soup, or pasta.Enjoy!
