My friend Melissa (another one, I have 3 to choose from) can attest to the ease and yumminess of this next recipe since she's made it a few times herself. The meatball recipe hails down from my mama and boy is it delicious, as most of her recipes are! You can serve these with rice, mashed potatoes, in a baguette or as I will share with you. All you need is a little patience, a little love and an empty stomach to fill. You'll need:1 pound ground beef
1 bag Israeli couscous (Osem makes the best)2 onions
1 large can diced or whole tomatoes
1/4 cup breadcrumbs
less than 1/4 teaspoon of turmeric
nutmeg

1 pound kosher medium ground beef
oil
garlic powder
onion powder
salt
pepper
In a bowl, mix you meat with breadcrumbs, 1 tbs water, 2 tbs oil, salt, pepper, a dash of nutmeg, a dash of turmeric, garlic and onion powder, mix it all up thoroughly with your hands and form your meatballs, for this recipe I like them a bit smaller than a golf ball. In a pot, sweat a chopped onion then add your diced tomatoes, salt, pepper and turn it on high till it boiling through then drop the meatballs inside and lower the heat, cover and simmer for 20 minutes. Then uncover the pot and simmer for another 15 minutes. In another pot, sweat a chopped onion then add the Israeli couscous a teaspoon of onion soup mix, a little salt (watch it not to add too much salt, the onion soup mix is full of it) then add double the amount of water, bring to a boil, stir, lower the heat and cover till ready.
