There are certain foods I didn’t learn to make till I got married. I figured I would just eat them at my mom’s and save myself the trouble, but as with anything in life, you need to take things head on, so Mhemer, here I come! For those of you who cannot decipher the word, I’m talking about the typical Moroccan omelette typically made for the holidays, served warm or cold plain or with a variety of meats and or veggies. My personal favourite is plain, but I also like it with peas and carrots. Mngina is definitely not on my list of favourite, by that’s just me. Anyway, this is what you’ll need:
6-7 large potatoes
6-7 eggs (my mom always said, 1 egg to 1 potato)
Oil
Kosher salt & pepper
½ cup diced carrots (optional)
½ cup frozen peas (optional)
In a pot, boil the potatoes then mash and slowly add one egg at a time and mix, then add the veggies, salt and pepper.
Meanwhile in a low pot than is oven safe, heat some oil, when very hot, pour in the mixture and let cook on the stove top on med-high for about 5 minutes till the bottom of the omelette has set then put in a 350 degree oven for 45 minutes to an hour till golden brown. Let it cool then make sure to unstick the sides if needed and flip on a plate, slice and serve.
