Beignets a l'orange


Any of my close friend can attest that my mom's mini "beignets" dusted with powdered sugar or glazed with honey are amazing. What's better is that they are very simple to make, and can easily be frozen and thawed when needed. The original recipe makes 100, this recipe makes 50. This is what you'll need:
1/2 cup orange juice
1/2 cup oil
3 eggs
1 tsp baking powder
the zest of 1 orange
splash of vanilla
3/4 cup of sugar
3 cups flour
In a large bowl, mix all EXCEPT the flour by hand, then slowly add 1 cup at a time of flour. When you get to the 3rd cup, add it slowly and test as you go along by pulling a piece of dough out and in your hand roll it to see if it still sticks, if it no longer sticks, you do not need to add any more flour, if it still sticks, keep adding the flour a little at a time. If you have added the 3 cups and the dough is still a bit sticky, add a tsp at a time and check. Once the dough is done, take off pieces about the size of a ping-pong ball, roll it into a strip and shape into a mini beignet, the donut should be about the size of a kfita in diameter. Heat the oil and fry. You can either dust powdered sugar on both sides or in a pot, melt honey then dip the beignet in it and the sprinkle sesame seeds or cover in coconut flakes. Enjoy!
