French fry omelette

Up until the time I offered my husband a slice of this omelette, I was under the impression that everyone had already tried it, but apparently not. My husband was even unwilling to try it, even though, really all it is, is an omelette that has French fries in it. Does that sound scary to some people? I don’t know, anyway, I love it. We usually cut it in wedges like a pizza and eat it as is or with ketchup. I think it’s worth a try, so here’s what you’ll need:

3 to 4 cups kosher fries
6 to 8 eggs
Salt & pepper
Oil

First start off by frying the fries, then drain and in the meantime whisk up the eggs, salt & pepper, pour into a heated oiled frying pan (not too large, a regular sized frying pan will do) once the bottom sets a little, add in the fries, make sure to spread them evenly and let it cook on one side at a medium heat, when the sides that cooked, carefully place a plate over the pan, take it over the sink and very CAREFULLY flip the omelette onto the plate and then back into the pan and return to the heat to finish the cooking process. Life up the bottom with a large spatula, once golden and fully cook, slide off onto a paper towel covered plate and let cool a few minutes, then serve in wedges like a pizza with salad or on its own.

  1. I make a Totilla Espanola that is very similar. But you slice idaho potatoes and fry those with sliced onion...never thought of tying it with fries! Sounds like a great alternative! Thank you!
