One of my favorite things to eat on Passover is a Passover roll, cracked open while hot and filled with Israeli salad. It's simple yet delicious and well worth a try. Of course you can buy these rolls, but I like to make them, and thanks to the fact that I finally bought "Second Helpings" cookbook, my mom doesn't have to ask her neighbor for the recipe like every other year. Here's what you'll need:
2 cups matzo meal
1 cup water
4 eggs
1/2 cup oil
1 tsp salt
1 tsp sugar
In a small saucepan, bring oil & water to a boil, in the meantime combine m. meal, salt and sugar in a bowl then when water and oil have boiled, add the meal mixture to the water, then add one egg at a time and stir. Let this rest for 15 minutes, the oil your hands and shape the dough into small rolls and place on a greased cookie sheet, bake at 400F for about an hour. This should make about a dozen rolls.
