Growing up in Montreal, I think we all know what a poutine is, but for those of you who don't, let me try and describe it.Imagine a large bowl full of golden, crispy fries, topped with gooey cheese, then smothered with a rich, brown gravy. Are you drooling yet?
Well I hope that you are, because with this simple recipe, you can now make this at home, here's what you'll need:
(serves 4 large portions)
6 to 8 cups frozen french fries or fresh cut potatoes
(sweet potatoes fries can also be used)
1/2 cup parve margarine
1/2 cup flour
3 cups kosher mozzarella cut into small chunks or shredded
2 full tbsps Osem beef consomme or beef flavored powder
4 cups boiled water
salt and black pepper to taste
*of course you could just find a can of parve condensed beef gravy, add water and call it a day*
In a saucepan, melt the margarine over medium-low heat. Add the flour and cook, stirring, for 5 minutes, until the mixture is golden-brown and smells like cooked pie crust. Whisk in the water in which you've diluted the beef powder and whisk till thick and creamy and no more lumps are visible.
Bring to a simmer, whisking, and then reduce the heat to low and simmer for 20 minutes, stirring occasionally. Taste, and season with salt and pepper if needed.
Fry up the potatoes, drain the excess oil on a paper towel, then start the assembling of one portion by but putting in half the amount fries in a narrow bowl, sprinkle some of the cheese, then add the other portion of fries, top with more cheese and ladle a cup of gravy over top and enjoy.
This is by no means a healthy recipe, but it's definitely delicious!

ReplyDeleteFor the authentic Montreal, non-kosher version, you'd need curd cheese (squeaky cheese) and real gravy, enjoy!
