There are so many Passover desert recipes like cakes, cookies, chocolate truffles, the ideas are endless. The only issue I have with them is that they usually take a lot more effort than I choose to give. My mom and I made this recipe on Sunday and it took 10 minutes prep time and 15 minutes in the oven, just perfect if you ask me. So here's what you'll need:
(makes about 50 to 60 balls)
1 pound raw almonds
1 pound raw walnuts
3/4 cup sugar to every 2 cup ground nuts (about 2 cups)
2 tsp cacao powder (optional)
3 eggs to every 2 cups of nuts (a total of about 8 eggs, maybe 7)
2 bags vanilla sugar
2 tbsp oil to roll
1/4 powdered sugar
60 mini papers for balls
Preheat oven to 350F (keep a few whole nuts to decorate the cookies)
In the food processor pour in half the walnuts and start the FP then add in the almonds and pulse till finely ground. Then, to that add a 3/4 cup of sugar, pulse for another minute then add the eggs and vanilla sugar. If you using the cacao for half the batch, add it in at this point, pulse another 30 seconds and fill in a piping bag for easier use.
Line all the papers on a baking sheet then fill each about 3/4 of the way, if you prefer to use spoons, do. Now top with either a whole nut of your choice or some ground nuts on top.
The next two cups of nuts, repeat, but exclude the cacao powder. You'll have about 1 cup or so of nuts left, add to that about 1/2 cup of sugar and 1 egg. These you can roll into a ball in your hands that you've coated in a bit of oil, this will help you roll them, then roll them in powdered sugar and put in the papers. Bake for about 15 to 17 minutes, then cool and enjoy!
