Spicy sweet potato & bean soup

I was in the mood for soup but didn't have a good variety of vegetables, all I had on hand were sweet potatoes and carrots. I decided to pair that with beans and Mediterranean type spices for a hot soup with a kick, here's what you'll need:

2 large sweet potatoes, peeled and cut into large chunks
1 large carrot
1 large onion, peeled and cut in two
2 garlic cloves, peeled whole
1 can mixed beans, rinsed
1 cup day old bread
chicken stock or water with bouillon cube to almost cover the vegetables
1 tsp cumin
1 tsp hot chili sauce 
1 tbsp olive oil
salt & pepper to taste

In a large pot add everything but the bread and bring to a boil, then lower the heat, cover the pot and simmer for 45 minutes or till the potatoes are very tender. Blend the soup with an immersion blender till smooth, then add the bread, stir it in to moisten then blend again with blender.
This soup is great on  a cold evening, enjoy!
