This week I wanted to make "general tso" style chicken, but i didn't feel like deep frying the chicken pieces and didn't have the jarred sauce. So I made home-made teriyaki sauce and tossed the chicken bites in and voila! Here's what you'll need:
8 boned kosher skinless chicken thighs, cut up into 1 inch pieces
2/3 cup flour
2 tbs cornstarch
3 tbs vegetable oil for frying
For the sauce:

For the sauce:
¾ cup reduced sodium soy sauce
5 garlic cloves
1 large nub ginger
2 tbs oil
1 cup water
1 tbs powdered chicken stock substitute
¼ cup brown sugar
¼ cup sugar
1/4 cup Sesame seeds (optional)
1 tsp cornstarch
Start by making the sauce; in a pot bring all the ingredients except the sesame seeds and cornstarch to a boil, then lower to a simmer and let it cook down, almost by a third. Once it's reduced, pass everything in a blender or with an immersion blender till smooth. To that add the cornstarch slurry to thicken (in a small bowl add 2 tbsp cold water to starch and mix with fork till diluted) and then the sesame seeds.
For the chicken, cut it up into pieces, then mix in a bowl the flour and cornstarch and dredge the chicken pieces. Heat up a frying pan and add the oil, then add in the chicken and fry for 3 minutes on each side. The chicken won't be fully cooked but that's okay because once the sauce is ready, bring it to a boil, then add the chicken and cook for about 8 minutes and serve.
