I was in the mood for pineapple chicken but had no VH sauce, so I made my own. Its pretty simple and doesn't need many ingredients, here's what you'll need:
1 can kosher pineapple chunks with liquid
1 large onion, sliced
1 knob fresh ginger grated
3 tbsp brown sugar
2 tbsp olive oil,
1 tsp tomato paste
2 cups water
salt to taste.
Saute onion in olive oil, then add
pineapple chunks and juice, salt, ginger and sugar, 1/8 tsp Turmeric, bring to a
boil the reduce cover and simmer. Once nicely reduced add
cornstarch and water slurry and watch it thicken. Toss with deep fried chicken
pieces (dipped in batter) or just strips of thighs meat sauteed In pan.
Coat and serve hot!
