I love baklava, but I've rarely found any worthy of my memories. My mom mentioned that she had seen a recipe on Israeli TV that seemed very easy to make and that she would try out.
She made, I ate, I liked!
The recipe itself is pretty basic, the assembly is the issue as well as and the amount of oil and sugar, so make it on a special occasion, where calories won't matter. Here's what you'll need:
(makes 36 pieces)
12 sheets kosher phyllo dough
3/4 cups almonds
3/4 cups shelled walnuts
3/4 cups shelled pistachios
1 cup granulated sugar
3 tbs cinnamon
melted butter or oil (as much as it takes)
Syrup
2 cups sugar
1 cup honey
1/4 cup water
2 tbs corn syrup
3 to 4 drops rose water (do NOT go over because it's very strong)
Preheat the oven to 350F
Start by prepping everything you'll need for the assembly, so in the food processor, grind the nuts to an even texture, should be small enough but not dust, you still want to see the pieces and set aside.
In a bowl, mix the sugar and cinnamon and leave aside and place another bowl with either melted butter or oil for the phyllo dough.
Now on a large baking sheet, place a piece of parchment, then the first sheet of phyllo (keep all other sheets covered with a towel to keep fresh, they dry out very quickly) and brush the whole sheet with oil or butter, then place another sheet and oil again, do that for every sheet (6 in total) then sprinkle half the amount of sugar and cinnamon mix all over the sheet (you can use less if you don't want it too sweet) then sprinkle half the amount of nuts all over. You now have a large rectangle filled with nuts from corner to corner. Start folding over the dough length wise about two inches wide very carefully, not like rolling sushi, you want to roll/fold once then pat down, roll again, pat down, till you are done, then with a very sharp knife, cut pieces about an inch wide and place them seem side down. Prepare the second batch, place everything on the baking sheet, then bake for about 45 or till golden brown. Let them cool. For the syrup, in a small saucepan, add all the ingredients together except the rose water and bring to a simmer, make sure not to let it burn. Once its simmered for about 7 minutes, add the rose water , stir then poor slowly over the cooled baklava pieces. Try and cover each piece with syrup and whatever is leftover on the sheet, you can spoon over the to make sure there aren't any dry spots.
Eat fresh and enjoy!

I think this one is the coolest and yummiest baklava that I have ever seen. And the recipe you have shared it's very helpful for us. I am promising you I'll try your's at home. By the way most of the time baklava to order online is my favorite because it is very easy to use. And we can get good quality baklava at a reasonable price.
