Soup's on! Minestrone

With Fall upon us, it's time to bring out our soup pots. I know of no other food which has the capability of soothing the soul, warming the bones and filling the belly. I just love to have mine with a crusty piece of bread and a nice piece of cheese. There are so many recipes to choose from, so many that I love, but today, what I'm thinking is how to raid the fridge and use as many veggies as possible.

 Kosher Minestrone Soup

1 large onion
3 cloves of garlic
3-4 carrots
2 stalks of celery
3 potatoes
Handful of green beans cut into 1 inch
½ cup of green peas
1 can of dark red kidney beans
1 pack kosher minestrone mix…or small small pasta, handful of lentils
1 can tomatoes, diced or crushed
Oil
2 bay leaves
Oregano, garlic and onion powder, salt. Pepper, chicken stock to cover, paprika
In a pressure cooker, put in your diced onions and garlic, sweat them a bit, add your carrots, celery, potatoes, green beans, the spices, then your can of tomatoes.
To that add your minestrone mix, or pasta.
Cook till ready then add peas and beans, cook another 5 to 10 minutes.
