Lentil soup

Have you ever had lentil soup? If you have, you know that it's full of iron, very hearty and healthy for you. What you don't know is that it can also be rich and delicious with very little effort, almost none actually.
Here's what you'll need:

3-4  cloves of garlic (crushed or whole)
2 tbsp Oil
2 cups kosher green lentils
4 cups chicken stock or Osem chicken soup and water.
2 tbsp cumin
Salt to taste

Add everything to the pot, bring to a boil, stir, then lower the heat and let it simmer, covered for about 45 minutes. When the soup starts to look creamy & the lentils are tender, you can blend a portion of the soup to really get a creamy and thick consistency or leave as is.
Serve with crusty bread or with a side of white rice.

Enjoy!
