Growing up I had a Haitien nanny, she gave my mother a few recipes along the way, the one that stuck and that we've made countless times is dirty rice, we love it, it's easy to make and delicious. There are probably different versions to this recipe but this one is simple enough that I think it'll suit all palettes. My mom always served it with breaded sole or Schnitzel and a side of Israeli salad. Here's what you'll need:4 to 6 pieces Sole
1 can red kidney beans
1 small onion diced
2 eggs
1/3 cup flour
1/2 seasoned breadcrumbs
1 tsp Dijon
Vegetable oil for frying
In a pot, sweat onions in oil for a minute then add your rice stir till well coated then add 3 cups water and salt. Let it come to a boil, stir and lower to minimum, cover and let cook for about 20 minutes till all water has evaporated, let rest. In the meantime, beat 2 eggs with Dijon, salt and pepper, in one bowl put flour, in another, the breadcrumbs. Heat the oil in a frying pan, dredge Sole in flour first, then the egg, then the breadcrumbs and fry till golden brown. 
Serve with rice and a salad and Voila, the perfect meal.

P.S. I usually serve it as is, but sometimes, I also serve with tartar sauce.
