Years ago, faced with a very poor looking pantry, I struggled to make a meal that would be filling, flavourful and full of protein. I had bowtie pasta, and a few canned items, spices and my imagination.
Here's what you'll need:
1 bag kosher farfale or bowtie pasta
1 can black beans ( you can also add red beans, but the original recipe was with black beans only)
1 can corn
1 red bell pepper
1 yellow bell pepper
1 large onion
1 tsp turmeric
2 tsps cumin
1/2 tsp paprika
onion & garlic powder, salt and pepper.
In a pot add 2 tbls olive oil, add in diced onion and sweat them a bit, then add your diced peppers, saute a few minutes and add your beans and corn, add water 1/3 to halfway up, and all our spices. Simmer for about 30 minutes then serve over your cooked pasta.
