Ohhhh Moussaka, how tasty you are! I don't know about you guys, but I just love it, it's the perfect balance of flavors, textures and heartiness. My recipe isn't exactly isn't the one you would usually see, it's my twisted take on it. this recipe isn't for the calorie counters, roll up your sleeves, this is what you'll need:
Large rectangular Pyrex
2 large eggplants sliced
3-4 potatoes
4 onions slices
3 large tomatoes
homemade or store bought tomato sauce of preference
1 pound kosher ground meat
salt
pepper
oregano

Peel and boil the potatoes halfway (tender on the outside, still slightly tough in the middle) and slice when cooled.
In a large skillet soften onion and slices tomatoes till caramelized slightly.
Fry the eggplant slices and drain on paper then in pan cook meat with one small diced onion till browned.
To assemble, ladle on some tomato sauce in Pyrex followed by a layer of eggplant, more sauce, then a layer of tomato and onion mix then potatoes, more eggplant then, layer on all the meat, followed by a layer eggplant, potatoes, then of tomato and onion, more sauce and topped off by a last layer of eggplant which you cover with a beaten egg white. Cover and bake at 350 degrees for 35 minutes, then uncover for 5 minutes till browned.
