The real Kosher Cream of Mushroom soup recipe

Cream of mushroom soup is delicious, it has many different variations but I find this one delicious. It's not too complicated to prepare and I can assure you, will be loved by all. The best part is that you can make it parve or dairy and both are equally delicious. Here's what you'll need:

1 small onion diced
2 leeks washed and sliced
2 packages fresh mushrooms sliced
2 tbsp olive oil
2-3 large tablespoons margarine or butter
3 large tablespoons flour
3 cups kosher Chicken stock or water with 1 full tbsp powdered vegetarian  or chicken flavored version
1/2 cup heavy cream or Soy Milk

Slice the onions and leeks and sweat them with a little oil till translucent then pass them with hand blender so there are no chunks. Then slice you mushrooms and add only 1/4 of them. Sweat them a bit too then pass them with the hand blender as well, after that, add the rest of the sliced mushrooms and saute till soft (I add a part of the salt at this point). In another pot, melt the margarine then add in the flour and whisk it till it becomes thick and changes color a little, make sure to keep stirring so that it's silky with no lumps, then add half the liquid a ladle at a time, while whisking. When everything starts to bubble, I ladle in the mushroom mix and the rest of the liquid to the pot and let it heat through, then add in the soy milk, or if making the dairy version, the cream and stir till everything is well homogenised. Let it cook for another 5 minutes and serve hot. Enjoy!
