Sushi for one

Sushi Magic Sushi Making KitYesterday the only thing I felt like having was Sushi, but didn't feel like going to the restaurant and I was dining for one. So I went to my local fishmonger, got myself a nice piece of salmon and went home to experiment. I have to say, it went over quite well. My menu was as follows:
"Seafood" salad, Salmon tartar and salmon teriyaki maki.
For my salad I used romaine lettuce chopped very thin, 1 cucumber, grape tomatoes, chopped scallions and kosher crabstick. The dressing was sesame oil, rice vinegar and some wafu dressing. I topped it with some French's fried onions. Then for the tartar, I finely chopped my salmon and added 1 crabstick finely chopped, 2 scallions, 1 avocado diced and dressed it with the same as for the salad, but added some chili sauce as well. For my maki I quickly cooked my salmon in sesame oil and then added teriyaki sauce, rolled it with rice and nori and voila. It was one of my first do it yourself sushi that I actually loved!
I know I'll be doing that again soon.
