I love preparing a good stir fry. It's one of those dishes that is so organized in it's preparation even though there are many ingredients. Ideally, you need to prep all the components before you start cooking, so that everything is read for you when you need it. I like changing up the main ingredients, like using tofu instead of kosher chicken or rice noodles instead of Chinese noodles or plain old spaghetti. No matter what you use, stir fries are delicious and nutritious and there is the extra bonus of making fun of your family as they try to eat it with chop sticks!
You will need:
1 pound chicken breast cut up into thin strips
1 yellow, green & red pepper cut into thin strips
1 onion sliced thin
1 package of fresh sliced mushrooms
2 large carrots chopped
1/2 cabbage sliced thin
1/2 package noodles cooked
1/2 reduced salt soy sauce
1 tbsp peanut butter
1 cloves crushed garlic
1 piece grated ginger
salt & pepper

In a wok heat some oil the put in your chicken and cook 3/4 of the way through and set aside. To a very hot Wok then add your onions, sweat them a little then add your garlic, followed by the carrots, let them cook till a tender then add your peppers and cabbage and finally your mushrooms. Let them cook and let the water from the vegetable evaporate, then add back in your chicken and pour in your soy sauce, grated ginger, salt, pepper and finally peanut butter. Once everything is cooked through, add your noodles and toss, taste to make sure there are no seasonings missing and serve.
