When you want an easy and quick meal, a Frittata is definitely a good option. The base is eggs and any veggie or extra that you like. I like mine with cheese, but you can make it with smoked salmon, chives, whatever tickles your fancy. You will need:
1 red pepper sliced
1 green pepper sliced
1 diced onion
sliced mushrooms
diced tomatoes
6 eggs
salt & pepper
Whisk the eggs in a bowl with salt and pepper and set aside. Heat a large heavy skillet with oil and saute the vegetables then add the eggs over top and let cook for 5-7 till set on the bottom and sides then place under broil for a few minutes till cooked and golden, make sure to keep an eye on it while under the broil. Cut in slices and serve with a salad and nice crusty bread.
