Loubia, white bean soup

Loubia is the perfect meal, you can serve it as a soup, or make it thicker, add pieces of hot-dog and serve it next to, or on top of white rice.  It has a very distinct flavour that should bring you back to your childhood (if your mom made that growing up) and warm up your bones on a cold evening. The recipe is simple and straightforward, this is what you’ll need:
2 cans of white navy or cannellini beans (you can also used dry but must soak them overnight then boil them for hours till tender then cook them with all the ingredients, so up to you)
3-4 cloves garlic
3 kosher hot-dogs cut up into bite size pieces (optional)
1 tbsp paprika
1 tbsp cumin
Salt –pepper
Oil
In a pot add the rinsed beans, water to cover, 2 tbsp of oil (you can use more if you like) the spices and the hot-dog pieces. Bring to a boil, then lower to minimum cover and let simmer till reduced.  I like it thicker than soup so I put in water just covering the beans, if you would like it more as a soup, add more water (for extra flavour, you could always add 1 tbsp pareve chicken stock powder).  Once nice and thick, serve over white rice and enjoy!
