Mujjadara, Rice, Lentil and fried onion recipe!

If you're anything like me, rice dishes are one of your favorite comfort foods. But this dish is even better than any old rice recipe you might have. It's savory, a bit sweet and plain delicious. I first had this dish at my friend's house, her mom used to buy it at a middle-eastern store, then one of my mom's friends made it, and I've been hooked every since. You will need:
6 large onions sliced
1 1/2 cups white parboiled rice or basmati
1 cup green or brown lentils
salt & pepper
oil
1/2 tsp cumin
1 tsp kosher onion soup (secret ingredient)
In a pan heat the oil and saute onions till soft then let them cook down till caramelised and sweet, set aside.
In one pot cook the lentils, I like to do a 1 cup lentils, 2 cups water ratio, a dash of salt and 1/2 tsp onion soup, the cumin, then let them cook till tender. In another pot prepare the rice. I heat some oil, dice half an onion, let it sweat then add the rice, stir till coated then add double the water, salt, the other 1/2 tsp of onion soup, bring to a boil, stir, then lower to a simmer, cover and cook for 15 to 20 minutes till done. When everything is done, i combine the rice and lentils, serve on a large platter and cover with the onions.
