Crispy, crunchy, golden, delicious latkes! If you now Joe, you know that for a few lucky people back in the 90s, there was even a latkes sandwich, but that is for a whole other blog...Anyway, back to the lovely potato patties; if they are done well, the will not give you heartburn and you will not feel like you've just had an oil dumpling. Here's what you'll need:
5 large russet or idaho potatoes
1 onion
2 eggs
2 tsps flour or kosher matzo meal
salt & pepper
oil for frying
Shred the potatoes and onion and put into a cheesecloth and twist till all the water comes out, this is how to get them crispy instead of soggy. Then add in the eggs, matzo meal and salt and pepper, mix shape into patties and fry on both sides till golden, crispy and delicious.
