Roasted chicken and potatoes

At least one weeknight should be devoted to a nice roasted chicken. What goes amazingly well with roasted chicken? Roasted potatoes.  I like roasting the whole bird myself, but you could always use the chicken leg only.  There are many different recipes for chicken and potatoes; like garlic & rosemary, Dijon & honey or herbs de Provence, but personally I like a very easy, very full proof; onion soup mix recipe. It’s sure to please everyone and it tastes wonderful.
You’ll need:
One large whole kosher chicken
Potatoes cut into cubes (I like Idaho or red potatoes)
2 tbsp onion soup mix
1 tbsp oil
Salt & pepper
I like putting my potatoes in a bowl and sprinkling over 1 tbsp onion soup mix, some salt and pepper and the oil, mix them around and then put them in Pyrex and add about a cup of water. Then place the chicken in the center rub in a little bit of oil and sprinkle the rest of the onion soup mix and a little salt and pepper.  Roast (or bake if you don’t have the roasting option) covered in a 400 degree oven for the first hour, then lower to 350 and uncover till golden brown (to make sure it’s well done, pierce a sharp knife in the thickest part and if the juices run clear, it’s ready).  Also, I make sure to baste the C+P as often as possible; it helps give a lovely even color.
