Salmon & "shrimps" with lemons & olives

When I get tired of my favourite fish, I make my husband's, sweet right? He loves this recipe; the brine from the olives and the sourness from the lemons are the perfect match. You can use preserved lemons, but I don't bother, I use fresh ones that I wash and slice very thin. Here's what you'll need:


1 baby salmon cut into filets
1 package kosher "shrimps"
1 can of pitted cooking olives sliced
2 lemons thinly sliced
4-5 cloves garlic
Oil
Freshly chopped coriander
Salt and a dash of turmeric
In a large shallow pan, add oil, garlic, sliced lemons and olives, cover with water and bring to a boil. Add the salt and turmeric and reduce by at least half, then add the salmon filets and shrimps and coriander and cook for at least another 20 minutes, till sauce has reduced, all water has evaporated and salmon is firm to the touch.
