It’s Saturday night, you’re hungry, but can’t even think of cooking anything substantial after all the Shabbat food, what’s the best option?
I don’t know about you, but in my house, and as a kid, the best option was a pita pizza. You take one of those thin pitas, put on a thin layer of prepared pasta sauce or some even use tomato paste with oregano, and top with cheese, my husband likes olives with his, I like mine plain. Now when I’m really in a mood, I skip the traditional toppings and spread a layer of ricotta, I sprinkle some oregano, onion and garlic powder and freshly cracked pepper, then add thinly sliced tomatoes, fresh baby spinach, a few pieces of sun dried tomatoes and grate some cheese on top, any cheese will do, kosher goat cheese is perfect for this kind of pizza and bake till gooey.

I serve it with a simple salad or just as is and it’s usually very appreciated.
