Since I feel a bit off today and I'll probably go make myself some chicken soup, I figured I'd share my recipe with you. There is obviously the basic chicken soup that we all know how to make, I just like to make mine with a bit of a zing. This is what you'll need:
2-3 large pieces kosher chicken (you can use a whole chicken and then use some of the breast for chicken salad)
4 carrots
4 celery branches
1 large onion
2 small nubs ginger
2-3 cloves garlic
2 green onions
1/4 tsp turmeric
salt & pepper
2 bay leaves
rice noodles or any noodles that you like
I boil my chicken in a large pot of water, once it starts to boil, I skim off the scum then add an onion cut in half, 2 celery sticks cut up and 2 large cut up carrots, the garlic whole, 1 ginger nub, the bay leaves, turmeric, salt and pepper. Once it has cooked down and the chicken starts to fall off the bone i strain the stock into another large pot put it aside and pull apart the chicken and take all the pieces that I will be using in my soup and set aside. The aromatic vegetables that have done their job can be thrown away. Now into the pot with the stock, I add the shredded chicken pieces, the finely diced celery, finely diced carrots, grated pieces of ginger and my noodles. Once that has boiled and the veggies and noodles are tender, I serve and add chopped parsley on top.
