Chicken teriyaki with onions mushrooms


I was in a rush the other night and needed a quick meal, so I checked my fridge and found mushrooms, onions and a jar of teriyaki sauce. In my freezer I had a package of boned, skinned chicken thighs and basmati rice, perfect, a full meal! I love meals that can be made in under 30 minutes, they make me happy, so I hope that this one makes you happy too, here's what you'll need:


1 package boned, skinned kosher chicken thighs
1 pint mushrooms
1 large onions diced
1/2 jar of teriyaki sauce
1 cup kosher basmati rice
salt & pepper
1/2 tsp ginger powder
1 tbsp of flour
oil


For the perfct basmati, you must rinse it under water till the water runs clear then soak it in water for 15 minutes then drain put it in a pot with 2 cups of water, salt, pepper and 2 tsps of oil, bring to a boil, stir then lower the heat to a minimum, cover and cook for 12 minutes, then turn off the heat and leave covered for another 15 minutes then fluff with a fork and set aside.
In a pan saute the chopped onion then add the mushrooms and saute till
browned and set aside. Then in a large skillet, heat some oil and add in the cut up chicken, salt and pepper, saute till it starts to brown then add in a tsp of flour and mix together (this will help make the sauce thicker). To the chicken add the onions and mushrooms, then the ginger and finally the sauce , stir and let thicken then serve beside the rice and enjoy!
