My husband loves potato kugel, but there is one he especially loves which he received from a hassidic friend of his, it's very simple to make. It has a very wet texture to it with a slightly crunchy exterior. I don't think it'll suit every one's tastes, but if you think you might like it, give it a try. Here's what you'll need:
serves 12 to 16 people.
10 Idaho potatoes
9 eggs
1 cup oil
½ cup club soda
Salt
Pepper
Whisk the eggs, salt and pepper and pour into foil or Pyrex then whisk in oil and seltzer and set aside.
Then grind peeled potatoes in the food processor and finally mix everything together in the Pyrex and put into a 450 degree oven and bake for an hour.
This is the approximate recipe if you would like third of the recipe, for about 4 people.
3 large potatoes + 1 small
3 eggs
1/3 cup oil
Pepper + salt
2 to 3 tbsp Club soda
