Lemon chicken meatballs with onions

There are so many ways to prepare chicken, one of the ways I've discovered in the last few years is ground chicken made into meatballs or patties.
I admit that this particular cooking method grew on me only recently, but I now appreciate the versatility that it allows. This chicken recipe hails from my aunt Francine and is loved by all, so here's what you'll need:


1 pound kosher ground chicken or ground breast meat
1/4 cup breadcrumbs
1 egg
1/4 cup chopped parsley
1 onion diced
juice of 1 lemon
1/2 cup chicken stock
2 cloves garlic sliced or crushed
salt & pepper
dash turmeric
oil


In a bowl, mix the chicken, breadcrumbs, the egg, parsley, salt & pepper and shape into patties or kabobs then pan fry on both sides and set aside.
In the same pan, add the chopped onions to the oil already in the pan, sweat them then add the garlic, followed by the stock, lemon juice and a dash of turmeric then place the patties side by side and bring to a boil, then lower to a minimum, cover and let cook for about 20 minutes, then uncover and cook for another 10 or till sauce has reduced and thickened. Serve with rice or vegetable side and enjoy!
