Meatballs with caramelised onions

I’m sure every one of you have tried this dish at least once, if you have you know how delicious it is, if you haven’t, what are you waiting for to try it? Obviously, if you dislike onions, this may not be for you, although, it tastes sweet rather than oniony.  This is an easy recipe in that there aren’t that many steps except for patience. Here’s what you’ll need:



1 pound kosher ground beef
7 to 8 onions
Less than 1/4 cup breadcrumbs or matzo meal during Passover
Less than 1/4 teaspoon of turmeric
Dash nutmeg
Oil

½ tsp cinnamon
2 tsps sugar
1/5 cup saffron infused water
Garlic powder
Onion powder
Salt & pepper


In a bowl, mix you meat with breadcrumbs, 1 tbsp water, 2 tbsp oil, salt, pepper, a dash of nutmeg, a dash of turmeric, garlic and onion powder, mix it all up thoroughly with your hands and form your meatballs, in this case the meatballs are made smaller than usual, about half the size. Then in a large pot, heat some oil and add all the sliced onions, salt, pepper, cinnamon, sugar and finally the saffron water, bring to a boil, let them sweat and cook them for about 25 minutes, then add the meatballs, lower the heat to simmer, cover and let cook for about 30 minutes, then uncover and let cook till the onions have caramelised and the meatballs have a nice deep brown color.
