Quiche...just the word gets your taste buds going. Who doesn’t enjoy a nice slice of quiche, served with a side of salad? Which brunch, wedding shower or baby shower would be complete without it? I love quiche any which way, spinach, cheese, onion, combos, they all appeal to me, one flavour combination I really enjoy is mushroom and onion. I’m usually a glutton for punishment and make my own crusts, but in the case of party or brunch, I don’t break my head, I just buy a frozen uncooked crust, already in the pan, it saves a lot of time and energy. Here’s what you’ll need:
1 crust
2 eggs
¾ cup of half & half of cream
2 large onions sliced
1 pint of sliced mushrooms
1 cup kosher grated cheese (can be cheddar, Gruyere, or Havarti anything really)
Salt & pepper
Preheat oven to 400 degrees then bake your crust for 15 minutes and set aside (make sure to dock the crust with a fork to let the steam escape before you bake it).
In a skillet heat the oil then sauté the onions for about 10 minutes then add the mushrooms and sauté till they turn brown. In a bowl beat the eggs, the cream, salt, pepper and half the cheese, then add the onions and mushrooms. Place the crust on a tray to avoid any spillage the pour the mixture into the crust, top with the remaining cheese and bake at 375 till golden and set.
