Pasta salad

This is an easy meal that you can prepare last minute. What’s nice about it is that you can make what you want out if it. The base of this meal is the pasta, in which, typically the 3 coloured spiral pasta is used, but you can also try bow ties, regular spiral pasta, macaroni or even wheels. What you add in afterwards is a question of taste. I like more of a traditional approach to pasta salad myself, but you can go as far outside the box as you please. So here’s what you’ll need:

½ bag pasta
1 bunch green onions chopped
1 red bell pepper diced
1 can corn
1 carrot grated
2 cans kosher tuna (optional)
3 pickles diced (optional)
½ cup mayonnaise
Juice of half a lemon or tbsp vinegar
½ tsp chopped fresh dill (optional, dill has a very distinct flavour that isn’t for everyone)
1/4 tsp onion powder
1/4 tsp garlic powder
½ tsp dried parsley
½ tsp Mrs. Dash (optional, but adds nice flavours)
Salt & pepper

In a pot bring water to a boil, add 1/2 tsp salt plus 1 tsp oil and add in the pasta and cook till al dente, then drain and let it cool a little. Once cooled, toss everything together, refrigerate and serve.
For a different variation you could use: Cherry tomatoes, chopped black olives, sun dried tomatoes, feta cheese, red onions, oregano, olive oil and vinegar.
Enjoy!
