"Riba" cookies

Sweet, melt in your mouth Riba cookies. These little peaks are delightful, typically Moroccan and amazingly easy to make. I made them last night for the first time, I started at 10pm and was done by 11pm, tasted one by 11:01 and confirmed to my mom that I aced her recipe, proud she was, so was I. So here's what you'll need:



1 cup powdered sugar
1 cup oil
1/2 finely chopped walnuts or almonds
1 pinch of salt
1/2 tsp vanilla
*secret ingredient: 3 large tbsp of peanut butter, if you use this ingredient, reduce the oil to 3/4 cups oil instead of 1 cup oil
2 cups flour to 2 1/2 cups flour

Preheat oven to 325F
In a bowl, mix everything except the flour with your hand, then add 2 cups flour and mix then slowly add 1 tsp of flour at a time. The texture needs to be pliable, but stiff enough so that you can form a small ball in the palm of our hand and shape the peak, if it's still to soft to make a proper peak, add some flour. Once ready, line a baking sheet with parchment paper and roll each cookie (about the size of a large gumball), then shape into peak and place on tray. Bake in the oven for 15 to 22 minutes till they start to crack all over, the cookies must remain white. Once done, let cool, then sprinkle with a mix of cinnamon and powdered sugar.
