"Seafood" chowder

I've never had the real deal, but it always looked so good and in the past year I've tried a few versions of what I think it should taste like, and this one is pretty good. If you really wanted to go all out, you could use the "scallops", "crab" and "shrimp", as well as salmon, but I just use the "crab" and salmon. Here's what you'll need:



1 large piece of fresh salmon
1 package kosher "crab" meat
3 steamed potatoes cut into cubes
2 cups water with 1 tsp chicken soup substitute
3 leaks sliced
1 onion diced
2 celery ribs diced
1 red pepper (optional) diced
2 tbsp flour
1/2 cup white wine
olive oil
3/4 cup soy milk or milk
salt & pepper
thyme (optional)
1 bay leaf

In a large pot sweat the onions, celery and leaks, I like to blend them afterwards so that there are no chunks, then put it back into the pot, add the pepper, saute and add the wine and reduce then add the steamed potatoes, then to that the flour, mix everything till the paste changes colors then add the broth and soy milk and make sure to stir well so that there will be no lumps, add the seasonings and bay leaves, then the "crab" and Salmon pieces, let everything simmer. Once the salmon is cooked through, the soup is done.
