I love egg salad, but how many eggs can you eat a week? I had tasted a tofu egg salad from fontaine sante and though you cannot mistake it for the real thing, it's not bad at all. Now since fontaine sante isn't kosher I had to figure out how to make it, so I checked the ingredients, omitted a few things I couldn't pronounce and voila; "Egg salad"! Here's what you'll need:
1 package firm plain tofu
1 large tbsp mustard
2 to 3 large spoonful of mayonnaise
salt & pepper
onion & garlic powder
dry parsley
In the food processor pulse the tofu till it's grainy in texture, then mix all the ingredients together and serve on toast, crackers or which ever way you usually eat egg salad.
