I made myself a lovely, fresh and tasty salad the other day that only took me 5 minutes to make. You can use any fresh veggie on hand, I used
the ones I like the most and threw in some goat cheese because I love the "tanginess" it offers. Here's what you'll need:
2 avocados diced
1 pint cherry tomatoes
2-3 cucumbers sliced in half and chopped
3-4 chopped green onions
1/2 cup walnuts
1/4 cup dried cranberries
1/2 cup crumbled goat cheese
1/3 cup olive oil
1/4 cup balsamic vinegar
salt & pepper
1/2 tsp Mrs. Dash
Toss everything together in a bowl and serve with toasted wedges of pita or crust baguette and enjoy!
