Strawberry crumble cake

 I love this recipe mainly because it's tasty but also because it's so easy! You can make it with strawberry preserves, pie filling or even one part fresh strawberries and one part jam. You could even switch the berries for cherries or blueberries. It can easily be made parve, so great for after meat or shabbat meals.
Here's what you'll need:



1 8x8 or 9x9 foil pan
2 cups flour
1 tsp baking powder
1/4 cup sugar (or you could also use splenda)
1/4 cup butter or Crisco
1 tsp vanilla
1 egg
3 tbsp oats
1 cup jam or preserves
1 tsp lemon juice


In a large bowl mix everything except the jam, oats and lemon juice, the texture will be crumbly, that's how it's supposed to be. Keep 1/4 of the mixture aside for the topping, in the pan press the dough evenly then add the jam mixed with the lemon juice and use the rest of the crumble plus the oats crumbled over top. Place into a 375F heated oven and bake for 45 minutes.
