1 white cabbage sliced and boiled for about 5 to 7 minutes then rinsed
4 to 5 large onions sliced
8 large potatoes peeled and sliced in rounds about a 1/4 inch thick
1 can tomato paste
1 can diced tomatoes drained
2 tbsps olive oil
2 cups water
1 tsp oregano
salt & pepper
If you choose the meat version:
(1 pound kosher ground beef or 1 boil chicken skinned and then pieces pulled apart into small pieces)
Now, I start by boiling my cabbage first because it cuts the cooking time. For the quick parve version, saute a sliced onion in the olive oil, in a large pan, then add the chopped cabbage and sliced raw potatoes. To that add the tomato paste, canned tomatoes, spices and water to cover, bring to a boil, the reduce the heat to a low and cover. Stir it every so often, be careful not to break the potatoes and uncover after about 40 minutes and cook uncovered for another 15 to 20 minutes. That's it!
Now, for the meat version, start by sweating an onion in some olive oil, then add the ground meat, some salt, 1/2 cup of water and let it cook for about 30 minutes, mixing often to break down the meat, then in a large skillet, do the same steps as above, except add the meat. Also, once the 40 minutes have elapsed, put the put into a 350F oven for about 1h30 to 2 hours, until everything becomes roasted and caramelised. The onions at this point will have become sweeter and the tomato sauce will have turned sweet and delicious. Same principal if using the chicken, boil it, skin it, let it cool then pull it apart and add to the onions, potatoes, cabbage etc.
Enjoy!
BTW this recipe serves ALOT of people and you will need a big roasting pan, maybe even you're dafina pot.
