So we were craving some pasta tonight, more specifically, I wanted Alfredo sauce and my hubby wanted Rose, but I had no cream, no butter, no Parmesan and I didn't have the patience to make a tomato sauce from scratch. My theory in the kitchen is when in doubt, wing it! Here's what you'll need:
1 package of pasta, whichever you prefer
for the Rose sauce:
1 jar or can of prepared pasta sauce
1 onion finely diced
2 tbsp cream cheese (not needed if you have cream)
1 bunch fresh basil (if you have it)
1 bay leaf
1/4 tsp oregano
1/4 tsp dried basil
1/4 tsp garlic powder
1/4 cup of milk (cream if you have it)
1 tbsp olive oil
salt & pepper
for the Alfredo sauce:
3 large tbsps of butter or in this case margarine
1 1/2 cups milk (or cream if you have any)
1 clove crushed garlic or 1/2 tsp garlic powder
2 tbsp cream cheese
2 tbsp goat cheese (not needed if you have Parmesan, but has a nice bite)
1/2 cup mozzarella
1/2 tsp cornstarch (to thicken)
salt & pepper
1/4 cup chopped fresh parsley
In a large sauce pan, saute the onion then add the tomato sauce, the spices and bay leaf and then the milk and cream cheese, let heat through on a low heat, serve over pasta, if you have any cheese, you can grate it over the pasta, enjoy!
For the second sauce, melt the butter, then add the milk and let boil on a low heat, then add salt, pepper, garlic powder, cream cheese and goat cheese, let it come to a slow boil. If the sauce is thick enough, no need for the cornstarch, if it isn't, dilute the cornstarch in a tbsp cold water then add to the sauce. Finish with the mozzarella and serve over pasta. You can serve with extra grated cheese and chopped parsley.
