Potato salad

Some call it Russian potato salad, some call it Israeli potato salad, to me, it's just potato salad and I have it on my Shabbat table nearly every week. It's a simple and tasty addition to an already full table, but we love it. It doesn't take that many ingredients so it's not too difficult to make and as an added bonus; kids tend to love it. Here's what you'll need:


4 eggs
6 to 8 red potatoes
2 carrots
4 kosher pickles
1 cup frozen peas
3/4 or less of mayonnaise
2 tbsp of white vinegar

Peel and boil the potatoes, eggs and carrots, when they are almost fork tender add the frozen peas till ready. The carrots won't be as tender as the potatoes, that's OK. Let them cool then peel the eggs and dice them, add to that the diced carrots and potatoes, then the diced pickles and toss with salt, pepper, vinegar and mayonnaise, it's as simple as that.
