I wanted a light supper the other night and didn't quite know what to make, so I rummaged through my fridge and found enough ingredients for a tasty salad. What's nice is that you can add whatever you like that you have lying around, I tried to stick to a more Asian feel. Here's what you'll need:
(this recipe serves 4 to 6)
1 romaine lettuce, washed, dried and chopped
3 cucumbers sliced in long thin strips
3-4 chopped green onions
2-3 tomatoes sliced
1-2 sliced avocados
8-10 crab sticks, peeled into long strips
3 endives sliced
1/2 cup endamame beans shelled
Dressing:
you can keep it basic with a 1/4 cup toasted sesame oil and 1/8 seasoned rice vinegar, but I like to mix some Wafu dressing with a splash of sesame oil and rice vinegar, sometimes, some hot sauce as well.
You can sprinkle some French's fried onions and rice crispies on top for some extra crunch and flavor.
