Homemade mayonnaise

I learned this recipe from two of my closest friend's moms, it's a combination of their 2 recipes. I usually make it for the holidays because it's great with meat or even fish and "pastelles de pommes de terres".
Here's what you'll need:

1 egg (they use the yolk only, I use the full egg)
1 tbsp of dijon mustard
the juice of 1 lemon
1 to 2 cloves garlic
salt and fresh ground pepper
about 1 cup of oil, give or take

In a food processor add everything but the oil and the lemon and start the engine! Then slowly drizzle in the oil till the mixture starts to go from very liquidy, then slowly to stiff. Stop the processor, taste to make sure the seasonings are ok, then turn it back on, add the lemon juice and voila, mayonnaise done. Enjoy!
