Frances' matza farfel casserole/stuffing

I got this recipe from my boss Frances 2 years ago and I've made it since and it's a hit! It simple ingredients but all together becomes a delicious side dish for any meat that you serve up. Here's what you'll need:

1/2 box matzo broken up into small pieces or a box of farfel
1 large diced onion
2 diced celery branches
1 diced red pepper
1 diced green pepper
1 pint chopped mushrooms
1 cup chicken stock
1 beaten egg
salt & pepper
oil

In a pan heat about 1/3 cup of oil, saute the onion, then the celery, the peppers, then the mushrooms, once they have browned, set them aside. Soak the matzo in water for less then a minute, strain and squeeze out the liquid. Heat the oven to 350F, preheat the 9x12 oil covered Pyrex in the oven for 10 minutes, and in the meantime add the chicken stock, the veggie mixture, the tender matzo, salt & pepper to the pan and cook for 5 minutes, add in the beaten egg, stir it all up, then pour it all in the hot Pyrex, sprinkle paprika over top and bake for 30 to 35 minutes and enjoy!
