Like our french fry omelet, this is a simple quick meal idea that can be great for a packed lunch, or served up warm with "salade cuite" over top. Whichever way you like it, this is a great meal idea that kids especially are sure to love. Here's what you'll need:
4 eggs beaten
oil salt and pepper
In a bowl beat the eggs with the salt and pepper then add the broken matzos, then heat up a little bit of oil in a small to medium sized frying pan and pour in the mixture, you should have enough to cover the whole pan from 1/3 up to 1/2 way up the pan, let the omelet set on one side, then very carefully, place a plate on top of the omelet, bring the pan over your sink (for safety) and flip the omelet on the plate, be CAREFUL not to burn yourself with the oil, then slide the uncooked side of the omelet back into the pan, and back on the stove till the other side is fully cooked. When done, slide onto a plate with a paper towel, let cool a little and slice like a pizza. Enjoy!
