Sweet, caramelised fruit wrapped around golden chicken, need I say more? This is a delicious meal to serve up for the holiday and it's easy to prepare. Here's what you'll need:
1 large whole kosher chicken (or cut up if you prefer)
3 large sliced onions1 cup pitted prunes
1 cup pitted dried apricots
1 cup raisins
1 1/2 cups orange juice
1/4 saffron water
salt & pepper

First soak the dried fruit in the orange juice for at least 30 minutes, then in a large roasting pot/pan add 2 tbsps oil, the sliced onions, the dried fruit with the juice, the saffron water, then place the chicken in the middle, season and bake covered at 350F for an hour, then 45 minutes on 300F, then uncover and bake till golden brown. make sure to baste the chicken and fruit every 30 minutes while cooking.
