What I love about salmon is how versatile it is. I wanted to switch it up a bit this Friday night, so I made it with a tomato, lemon base. Here's what you'll need:
6 to 8 salmon fillets
2 large sliced tomatoes
2 large red peppers sliced (optional)
4 whole garlic cloves
1 lemon washed and sliced into thin slices
coriander
1 cup saffron infused water or water and 1/4 tsp turmeric
salt
In a large saucepan, add everything except coriander and salmon, bring to a boil, then lower to a minimum and let it simmer till it reduces by at least half. Then add the salmon, baste with the sauce bring back to a boil, then lower to a minimum and cook for 20 minutes, add the coriander then cook another 5 to 10 minutes, make sure to baste the fish the whole while so that it doesn't dry out.
