Tuna croquettes


Croquettes are an easy way to use up leftover Salmon or a quick way to make a meal out of canned tuna. During Pasover, all you have to do is coat them in matzo meal and there you have it. Here's what you'll need:

2 cans tuna or leftover cooked salmon (you could also combine the two)
3 large boiled potatoes (you can mix white and sweet)
1 large finely diced onion
2 eggs
1/2 tsp onion powder
1/2 tsp garlic powder
salt & pepper
1/2 cup matzo meal
Oil for frying

In a large bowl shred the fish with a fork, then add the mashed potatoes, the onions, the spices, the eggs and mix. It's better to let it rest in the fridge, it'll help so that when you want to shape the patties the mixture won't be too soft. Once cooled, shape the patties whichever shape you prefer and dredge in matzo meal and pan fry in vegetable oil, drain on paper towels.
