Turkey meatballs with caramelized onions and mushrooms

At a loss for an additional Passover meal? This one is simple yet sure to satisfy, here's what you'll need:

1 pound kosher ground turkey thigh or chicken thigh, you can even mix both
1/4 cup matzo meal
1 egg
1/4 cup chopped parsley
1 1 large onion sliced
1 pint quartered mushrooms
salt & pepper
1 cup saffron infused water
1 tsp onion soup mix (the potato starch helps to thicken the sauce)
1 tsp mustard
oil

In a bowl, mix the chicken, matzo meal, the egg, parsley, salt & pepper and shape into patties or kebabs then pan fry on both sides and set aside. In the same pan, add some oil and brown them on high, be careful not burn them, then add the mushrooms till they brown, then add water, the mustard and the onion soup and let it come to a boil then lower the heat and add the turkey patties and let everything simmer for 30 minutes. I served it with roasted potatoes simply done with olive oil, salt and pepper and then before serving tossed them with my homemade mayonnaise, it was delicious.
